McCormick & Schmick’s Upside Down Apple Pie

I had the best apple pie ever at McCormick & Schmick’s. I totally need to make this one. Enjoy!

List of Ingredients
Walnut Crust (see recipe)*

Pastry Crust (see recipe)**

For the pie filling:

1/2 cup sugar, granulated

1 teaspoon cinnamon

1/8 teaspoon nutmeg, freshly ground

1 tablespoon cornstarch

8 cups Granny Smith apples, peeled, cored and sliced

1 tablespoon butter, cold, cut in small pieces

Caramel sauce, your favorite


Recipe
Combine sugar, cinnamon, nutmeg and cornstarch and mix well. Pour over sliced apples and mix well. Set aside.

To assemble: Line a 9-inch deep pie tin with parchment paper, allowing enough paper to drape over the edges by at least one inch. Place the Walnut Crust in the bottom of the lined pan and pack down tightly allowing the mixture to go about 1/2 way up the sides of the pie tin.

Take half of the pastry dough and roll out into a circle, no more than 1/4-inch thick. Place dough gently on top of the walnut mixture.

Fill the pie with the prepared apples and arrange the tablespoon of butter pieces all over the top.

Roll out the other half of the pastry dough and place over the top of the pie. Brush cold water between the top and bottom crusts so that the dough will seal together. Trim away the extra dough allowing enough to pinch together into a decorative pattern. Pierce the top crust in several places to allow steam to escape.

Bake at 325 degrees for 60 to 70 minutes or until the crust is a deep golden brown and the apples have begun to bubble and the juices are running. Remove from the oven and cool to room temperature.

Once the pie is completely cold (at least 6 to 8 hours), invert it into either another pie tin or onto a platter, then gently peel away the parchment paper.

Cut into the desired number of pieces and serve either at room temperature or reheat at 350 degrees for 10 minutes.

Chef’s notes: Bake this pie on a cookie sheet so that if any of the bubbling juices run over the edges, they will not burn on the bottom of your oven.

Serve this pie warm, with cinnamon ice cream and drizzled with caramel sauce, homemade or store-bought.

*WALNUT CRUST

1/2 cup plus 2 tablespoons brown sugar

1 1/4 tablespoons butter, melted

1 cup walnuts, roughly chopped

Mix all ingredients together and set aside. This mixture can be made several days in advance and left at room temperature until needed.

**PASTRY CRUST

2 cups all purpose flour

1 teaspoon salt

3/4 cup (6 ounces) butter, cold, cut in cubes

Ice water, as needed

Combine flour and salt. Add butter and quickly cut into flour mixture until it is the size of peas. DO NOT over mix or dough will be tough. Add just enough cold water to hold the dough together without it being wet. Wrap in plastic and set aside in the refrigerator until needed.


*****Substitutions: If you are running short on time, you can always use a purchased frozen unbaked apple pie. Remove the frozen pie from the tin, line with parchment paper and add the walnut mixture. Place the frozen pie on top of the walnuts and bake as indicated above. This is a great way to add a homemade touch to a pre-bought pie. .................................

Vacation around the corner

I haven't been on vacation for so long! When I think of vacationing, I am thinking not of traveling but resting my brain and coding something for fun while I longe around the house and have fun with family. So that's what is going to be on my brain till then. If anyone has any ideas send it my way.

Tons to do, Not Much To Worry About

So remember how I have this want to change. The change is happening. It seems like a slow change but in reality I am making a worlds of mini changes. Hopefully I can can get to a point that I can start crossing off things on my long list of to do... discard papers(I've thrown away 2 boxes), organize finances( I started by writing things down), organize my storage closet(I started putting things where the belong), organize and donate clothing(I started giving the most random stuff but at least I'm doing it), finish the front yard(I trimmed the hedges and the lawn is regularly mowed), fix up the garden, and get fit( I am down 6 pounds). That alone is my personal to dos still.

The most under utilized people in the school system

Real school cooks who really cook and school counselors that are involved with all students at the school are non existent these days.

Most kids would not be obese if cooks cooked healthy meals at school. We should not cook what kids think they want. French fries are not a vegetable. Food is powerful because a well balanced meal prevents depression.

If we had school counselors be their school counselor and visit all kids at least once year every year by the same counselor. Many things would change and be prevented by a simple change in how their role is from today. We as a nation need to think more proactive about students. They act out because they need attention but before it gets really bad, instead of having smaller classes costing tons of tax payer money maybe having people that don't just deal with standardize tests become the most powerful currently under utilized in school influence in the students lives.

What gets me going

So people who know me know that I get so excited when I talk about certain things. I love solving problems. I get sucked into it and I can't stop thinking about it. It is my weakness but that is what I love. I think of course that is why I'm a programmer but I think that is also why I love cooking. I don't think I could ever be a cook but a restaurant owner I would love to do once in my life.

If I don't, minha mae pede pra mim.

So I have been working on the same Report for a week. Trying to figure out why my simple changes just like another report doesn't work. The Reports looked exactly the same( SQL, parameter values and so on). Frustrated at my parents house for Easter my mother asks, What's wrong Pri? I respond with along the lines that I am so over this because I couldn't figure out what was wrong. It should be so simple! My mother, with no technology education, nor experience tells me. Stop and pray to God, in the name of Jesus, pray. Then she stopped and asked for help from God for me.

Was it that simple? I don't even pray right then but it did put a smile on my face especially after my mother told me she loved me. I look back at my work and I guess just having stress getting lighter and clearing of my head, I figured it out. Did I just make excuses to rationalize what had just happened? I think there is a truth to all this. I believe in god but I think what I really believe is behind the madness there is a reason faith works. It's how our mind works. We need mental notes of how to organize our thoughts. Simple commands so we can clear our mind. I grew up with faith as my culture and not as my religion necessary. I should turn to God more often.

Quirky Oracle

So I was working today and I ran into a quirk in Oracle. My error went along the lines that my right parenthesis was missing. When 2 or more queries Union, Oracle doesn't like the order by inside the query. Therefore I had to do it outside of the query. Crazy right! That was so random! Things like this happen in real life some times.

Earlier in the day I feel I made a mends to a problem with a co-worker that was not created by me but just investigating it a bit I was able to get a resolution. Not everything is obvious at first but sometimes resolutions can be achieved with some effort. It's a good lesson because giving up and just accepting the situation doesn't teach anyone anything.
